Re: the carrot recipe, if they were underdone, why didn't you just leave them in the oven for longer?  I guess you were strictly following Oliver's instructions?  With something like vegetables, and meat to a lesser extent, it's okay to poke and prod at your food to tell if it's done.  If it feels like a raw carrot when you try to stick a knife in it, chances are it's close to raw and you should cook it longer.
